Taco Soup

It took me longer to figure out what to make for lunch today than to prepare and cook this dish! And yes, it tastes as good as it looks! This would definitely be a regular at KaiVegan kitchen. Aliyah's verdict? "Let's make this again, mom!"
TACO SOUP*
3 1/2 c vegetable broth
1 15-ounce can black beans, drained and rinsed (or 2 cups cooked)
1 1/4 c salsa
1 1/4 frozen corn kernels (more is okay)
1 c avocado chunks
1 c tortilla chips
Cook the broth, beans, salsa and corn on low heat for 10 minutes.
Meanwhile, chop the avocado and break up the chips into bitesize pieces.
Divide the chips and avocado evenly into 4 bowls and ladle the soup over.Serve immediately and enjoy!

The recipe sounds good, except maybe the avocado. I've never tried avocado.

I visited your other blogs, too. I had to bookmark one of your blogs when I saw that you're a Christian, you homeschool, and you eat a vegan diet. Do you also do a very low-fat version, like McDougall? I'm a Christian homeschooling mom who eats a near-vegan diet that's somewhere between McDougall and Eat to Live. Unfortunately, my family won't eat that way, so I've been going it alone for over two years. It also means I'm not very adventurous in my cooking, because I'm just cooking vegan meals for myself and have to cook SAD meals for my family.
What does kai-vegan mean?
Wow, I wonder how many vegan, homeschooling Christian moms are out there! I admire you for cooking both vegan and SAD meals for your family. One way I could relate to that is when dh asks me to put shrimps to Filipino dish I've veganized.
We started with the McDougall Program last year. It was really important that I explained to dh and dd#1 what it's all about. They're with me, for the most part. I serve them fish/seafood on "feastdays".
I got KaiVegan from the Filipino word "kaibigan" (pronounced kai-bee-gun), meaning FRIEND. I thought it was silly, but dh said it was really clever!
