EarthSave Potluck and More


This is the Quinoa Spring Salad from Vive Le Vegan! that I brought to the EarthSave potluck last Sunday. The Lemon-Herb Tofu, also from the same cookbook, that we brought along with the salad, went very fast. There was a guy there who called the quinoa - "couscous". Is that pretty common?

I went with Aliyah and she was really glad to meet another vegan girl there, which she now calls her friend.



We watched the film, "Modern Meat," which my girl found very interesting. I guess this film really sealed it for her that she'd never have a taste of flesh again. Sure hope so...

Same salad, different day. So light and refreshing, I see it being a regular around here.




When I saw the recipe for this Chana Masala from Vegancore, I know I have to try it. This is absolutely a treasure of a formula. Thanks, Vegancore.

And what does this have to do with the EarthSave post? Nothing, except that I'm thinking of making this kick-butt dish for the awesome people at EarthSave come next potluck.

That quinoa spring salad is loaded with gorgeous ingredients --- and colour. I'll bet it was a hit long after the potluch was over, with people remembering and reminiscing about the beauty and taste.

No matter how young or old we are, it is ALWAYS so cool to meet fellow vegans - how nice for young Aliyah to meet someone her age with some of the same beliefs.

What a wonderful world!

Teddy, I could try and describe the taste, but I suggest you try it... you might just like it.

I have a box of quinoa in my cupboard that hasn’t been touched in a while, I should try this! I never thought of making it into a cold salad before. Cous cous is something different all together as far as I know, they look similar but quinoa is a whole grain while cous cous is usually made form wheat almost like little teeny-tiny balls of pasta. I made the chana masala last night too, so good!

Kai, I think people just don't know what they're talking about. It kinda looks like couscous as that its light brownish tan and small. They are completely different though. Couscous is semolina, more in the pasta family and quinoa is the only grain on the planet that has complete proteins, among other great things too. Quinoa is an ancient grain and it has a nutty flavor unlike couscous.

The masala looks amazing and that spring salad looks very familiar!

I just picked up Vive le Vegan this week and haven't gotten a chance to cook from it yet. This salad may be at the top of my list. I have never had quinoa before so it will be a first.

And where may I ask are all of you getting vegan soy yogurt? My supermarket only carries baby flavors like strawberry. Some how i don't envision stawberry going well with the chana masala.

Leslie, I've done salads kinda similar to this, except I use couscous, but really there is something so unique about q.

Jessie, I get the PLAIN Silk-brand soy yogurt from the co-op or Whole Foods, in bigger (32 oz) containers.

Yay, I'm so glad you made it! It's definitely a keeper. My luckiest internet recipe find ever, I think. :) Re: yogurt - I get the 32 oz plain silk yogurt as well, though none of my health food stores sell it so I have to drive home (45 minutes) to get it. My stores sometimes carry the small plain Whole Soy yogurts, but it's hit or miss.
