Eggplant, Garbanzo & Green Peas with Coconut and Cilantro
Here's more of tofu and quinoa. Yes, they are that good!
The Indian dish was inspired by a recipe called "Green Peas with Coconut and Cilantro" from World Vegetarian, only I couldn't bear the sight of lonely peas, so here's my humble version:
pinch of asafoetida1/2 T brown mustard seeds
1 t whole cumin seeds
15-20 fresh curry leaves
1 large eggplant
1 cup cooked chickpeas
1 cup green peas, frozen
1/2 T sugar
turmeric
1 t ground cumin
1 t coriander
1/2 c grated coconut, soaked in 1/4 cup of hot water
4 T cilantro, salt to taste
Heat oil in a skillet, add asafoetida, followed by mustard and cumin seeds. After a few seconds add the curry leaves. Stir and add in eggplant. After 2-4 minutes, add in the chickpeas, green peas, sugar, turmeric, ground cumin and coriander. Add a few tablespoons of water and boil. Cover and simmer gently for 5 minutes. Uncover, turn the heat up to medium-high and add the coconut and cilantro. Salt to taste.
Someday I might even just follow the recipe and make it solely with green peas. But for now, we shall enjoy this medley of good things.

i've never tried quinoa... everybody has been talking about it recently...is it a grain? what does it taste like? did i read correctly it is a bit "nutty"? is it boiled? baked? i tried looking it up on the 'net, but my search skills must REALLY suck b/c i couln't come up with anything useful...thanks!
Twilight, I have a photo on my blog of quinoa plain once cooked. When it is dry it is bitter with saponens and you have to rinse them before cooking. Read my blog on "return of the quinoa" and you will get more info. Or google-it. Quinoa is a versatile grain that can be used in place of rice or anything like that. You can cook it any way you want once you boil it (15 minutes).

Patty, I got the fresh curry leaves from the Indian grocer. You can buy dried ones too, but the flavor would be inferior. They are like the bay leaves of Indian/Oriental cooking.

Thanks for the link I will look for them next time I go to the indian market. We eat so much curry and use turmeric in everything. you would think I would know about them.
I hear some folks in Okinawa drink turmeric in hot water like tea. Supposed to be really good for you

Hi, Crystal. I see you're in neighboring Apple Valley! I forgot the name of the Indian grocer here in Eagan, but I'll take note next time, unless you get there first. It's in the same strip mall as the Indian restaurant SAMBOL, which btw is very good. Address for the restaurant is 1260 Town Centre Drive. The store is a couple of businesses away in the same building.
The store carries fresh curry leaves and asafoetida, which btw, is also used in Indian cooking. Check this out:

Kick butt - I'll head over there as it isn't too far from us. I've been meaning to try SAMBOL, but have to time it right - I have clear braces and they stain as soon as I eat curry. So, I try to time my curry eating right before I go into the ortho for new clear ties. My ortho is in Eagan too.
