Here you go, Vicki...

Vicki was asking, "Where's the cake?"
I made a comment about it on her blog, and oops, forgot to post about it. But first let's start with: "Gooda Uncheese" from Joanne Stepaniak's Raising Vegetarian Children.
This wasn't too bad, and so easy to make, but nobody would even eat it. Sigh.

I've been making these Date-Nut Pop-Ems from Dr. Fuhrman's "Disease-Proof Your Child" regularly for the kids. I particularly am not fond of the process, but this is so good for the little ones, and hey, they actually like 'em. Susan also has it here.




I make smoothies with some veggies when I can, and here's what I had for today: a carrot, celery, 1/2 apple, frozen pineapple, orange juice, a date and a handful of SPINACH! Nothing close to nasty, it turned out so sweet, and in a good way. I made a comment about it, and Aliyah reminded me that it's because of the date. Mommy brain. She was getting all the ingredients for the Pop-ems when I was making the smoothie. Seeing the medjool dates, I grabbed one thinking that it would be a great addition to the smoothie. So right.
This is a copycat of Nava Atlas' Chocolate Chip Peanut Butter Cake. I used carob chips instead, and half the amount of the optional raisins. Everybody liked it. Aliyah even asked if that could be her next birthday cake. (She asks me this kind of question once every two months!)
We just felt bad for the little one since she couldn't have it yet, because of the peanut butter, and she was begging for it! Next time, I have to make sure I have another treat especially for her.

You brave gal adding spinach to your smoothie! I'd be afraid that the kids would detect that 'green' flavor and all the fruit would then be wasted. Good for you (and your kids)!

This is all so scrumptious looking Kai! I will have to try veggies mixed with fruits, since I am picky about it, but your photo looks tempting to me.

I know I ask a lot of people this (since it's oven-related), but can I pay you to send me some of this cake!? j/k. Everything is great, this is a fabulous post (and I agree with the family... minus the cheese).

What a great post. The cheese looks good... I've been wanting to try making vegan cheese like this... too bad the kids didn't like it. I love smoothies... haven't tried veggie ones yet, but you may have inspired me. The carob chip peanut butter cake looks really nice. Think I might give it a try!

The smoothie (and everything else)looks delicious!
When my son, now a teen, was a toddler we had a bit of a mishap with a date in a blender; the date banged around so violently it knocked the blender lid off...when my husband got home Willie couldn't wait to tell him about the incident, finishing with "Mommy say WHAT THE HECK WAS THAT?!!" It was so cute it kind of became a family catch phrase. Just glad I didn't say anything worse! :)

Kai, it all looks great. How come no one ate that cheese? It looks really good! Does it melt?

Way to add the dates to the smoothie. Great idea. Dates are so tasty!

No peanut butter for the little one... something special will come her way though, I have no doubt. I am a big fan of carob. Very nice looking cake! Scrumptious.

Longtime lurker, first time to comment. I was wondering with the peanut butter cake if the recipe would work if you subbed another nut butter or soy nut butter for your little one? It looks delicious.

Wow, Nava's recipe looks really good. I've still yet to make a shake with veggies. I'm afraid I'll mess it up somehow. Just intimidating to me.
The date nut cookies look great too.
Any reasone why the cheese wasn't too popular?

Vicki- I remembered the last brownies you made as I took a bite, and I thought that this cake might do it for your sweeties.

Dreena- actually, this is more like a mommy and baby smoothie. The kids have their own favorite. But yes, it took courage for me to add the green stuff!

Speaking of the cake, I have a question, but I would just hop on your blog and ask there next week when you're back.


Leslie- I was going to say something more about veggies in smoothies, but I just remembered that dd#1 reads this blog too. I better keep quiet. Hehe.

You won't have to pay me for this cake. I'd happily make it for you.


Dragonslayer- I'd probably go without the celery in the smoothie. The taste stands out.

K- I think it's the nutritional yeast taste that the kids don't like. It has carrots, cashews, etc. and I don't think it would melt.

Jennifer- hey, thanks for coming out! Glad you found my new abode.

My dd made the same comment about the nut butter! I'm not that brave when it comes to that, but I told her we'll experiment.


Teddy, the kids never liked the taste of nutritional yeast, but I thought this could break the chain.

I now have a Vitamix and whatever I throw in there comes out really nice and smooth. Otherwise, I never even tried with the old blender.


Isil- I consider not having an appetite a good thing, unless it's the kids, of course. Actually, raw food excite me more these days.

Hey is that green in your smoothie! I agree, sweet!

We don't care for uncheese cheese either... I used it up in baked calzones and hid it sandwiches to use it up. Hoewever, Bryanna (vegan feast) makes a wonderful melty cheese. I just used gruyere on my pizza and family loved it.

Kai - Your green smoothie looks great - I really need to add some greens to our smoothies. They have been getting healthier over the years (not that they were bad to begin with...yogurt, frozen fruit, canned juice), but always room for improvement.

We're not huge fans of un-cheese here either.. I always cut the nutritional yeast in it down from what the recipe says and that helps a bit.

The smoothie looks good.. don't you just LOVE the Vita-Mix? I was a little nervous spending that much money on a "blender", but have never regressted it.

Everything looks fabulous. My daughter loves her green juices. When I'm making them for her I add cucumbers and celery. It softens the taste of the kale and collards. A typical green drink in our house is kale, collards, garlic, cucumbers, and celery.
