My Sweetie's Birthday Cake

The cake we baked for my dear hubby's birthday looks monochromatic, but the taste is definitely not. It was super moist and delicious, easy to make, and gluten-free. It is an adaptation of the Best Banana Cake recipe from the new Vegan Family Favorites cookbook.

You can use whatever frosting suits your fancy, but since I was working with my daughter, I decided to use silken tofu blended with vanilla pudding mix. The bananas were mashed in the food processor, for that extra smoothness. The original recipe calls for white, but I'm glad I went with the brown rice flour. The salt amount was cut in half, so was the sugar. Anyway, here's what we came up with:

THE BEST BANANA CAKE
1 1/2 cups brown rice flour
1/2 t. salt
1 1/2 t. baking powder
1/4 cup + 2 T. sugar or sucanat
3 large ripe bananas, mashed
1 cup (or less) water

Mix all ingredients in a large bowl. The recipe says to bake in 8-inch round cake pans at 350 degrees F for 25 minutes, but we did ours in a bigger round, and it was done in 30 minutes or so.

I love the fact that we only used that much sugar, and that it is gluten and fat-free. Six ingredients for a cake that's so moist and oh so good. Not too shabby, don't you think?

Kai, the birthday cake looks so pretty & moist & yummy! Sort of an odd coincidence, but today I made 'Banana Bread' from "The Vegan Family Cookbook"!! I just got this cookbook ~ can you recommend other recipes by McCarthy?

I baked mine from "Vegan Family Favorites," and I actually haven't seen that cookbook you're talking about. But hey, I'd love recommendations too.

If you can find this (VFF) cookbook from the library, I'd highly recommend taking a look at it.

This looks so tasty. I've never had a banana cake, only banana bread and I can only imagine how good it was with vanilla frosting!

Thank you so much for posting that recipe! I was kind of disappointed, thinking I wouldn't get a birthday cake this year. With this GF, low sugar, whole grain recipe -- Now I get one! I could probably use date sugar... Maybe? You have no idea how happy this has made me :) .

Wow, beautiful family! That cake looks great. I'm amazed it turned out great with just brown rice flour (as I've had to mix it with other flours so far). Mmm, bananas and cake!

As a matter of fact, I am going to try it as soon as I can: I love how white it looks! And I am having already dreams of adding in some raspberries to make it pink, prunes to make it lilac, apricots to make it orange, kiwis to make it green...

Kai, that cake looks soooo good. I'm strange (that goes without saying!) about bananas. I don't like them except in baked goods. As a fruit on their own or in smoothies, ick. But banana cake with vanilla pudding tofu frosting....oh, I want to make some of that.
Your family is absolutely lovely. Your girls are very sweet and they have such wonderful names. I just got some local strawberries yesterday. Can't wait to have some. Thanks for sharing these posts. Very nice.

That sounds so good, and it's actually gluten-free! (I'm a celiac too) I'm gonna ask my mom to make this for me for my birthday. You could also probably make this into a gluten-free banana bread probably?
