The Vegan Chop Suey Comeback
We had a lot of leftover cut-up veggies from the party tray last Saturday and all I could think of was "Chop Suey." So I made that the other day when my dear Ron decided to leave work early, in time for lunch. Here it is again:
Sautee garlic and onion in veggie broth.
Mix in carrots and celeries, diagonally cut. Add more broth as needed.
Add the cauliflowers, broccoli, or other veggies that you have. Cook covered for a few minutes. Use a vegan seasoning cube to flavor.
Add red/green bell peppers towards the end, maybe mushrooms.
Mix a teaspoon or so of cornstarch with cold water and use to thicken sauce.

That was a cinch, and even easier with the vegetables already cut-up. To add to that, Ron did most of the work for the veggie tray and even the fruit tray. It is always nice to have him in the kitchen.
I was able to make this tofu dish too, which disappeared rather quickly in that Saturday omni-crowd.

Hello from Ireland. What a wonderful blog. I stumbled on it by searching for sprouting on blogger. I love your food. We are not vegans but we are growing our own veg for the first time this year. We also home school. We have never used noodles in cooking before but they look fab. I must find out how to use them. Will be back to read your blog again soon.

My posts have been far in between but I have some cooking noodles photos that I plan to blog about sometime.
Oh i will have to read them. I did buy noodles once from an asian supermarket but they were not nice. I was doing something wrong with them or else they were not a good type. I dont know. Yes growing veg is great. We have enjoyed our first 2 weeks of eating our own home grown food.
What beautiful photos! Your meal looks lovely. If it were a little cooler, I would be making your Chop Suey tonight...But, it will have to wait til next week, when hopefully our hot, humid weather goes away!

Mmmmmmmmmmmm! Go Kai! I love "converting" omnis ... at least showing them "the way" for food that's not only good but good FOR them. Way to go!
