Before I Go...


Chipotle, Corn and Black Bean Stew from VwaV is a family favorite now. Fresh corn really makes a difference in this concoction. The lime zest adds an interesting dimension to the flavor. I use diced instead of crushed canned tomatoes and it works great, especially the fire-roasted kind. I have frozen black beans that need to be used up so I was a little generous on that side... and with the cumin.


Can't keep tiny hands from this bowl of stew before I could take the shot.
Inspired by the above stew, here's my Southwestern Salad version. Such a refreshing mix, especially with (again) fresh corn, and other organic goodness. Where's the avocado?
Different hands, same story...

Great southwestern soup Kai. I am glad to see you posting again (even though I am days late). I commented back to you (very long) on my blog but I deleted it accidentally. I was happy to see you there.

The food looks great and that "different hands, same story" is so cute! It's so nice to see children gobblin' up those greens (or anything not artifically colored and unprocessed).

I just made that stew for the first time last week and loved it. I used diced tomatoes as well, since I have a much easier time finding organic ones of those than the crushed ones. VWAV hasn't let me down yet.
